Light and DELICIOUS!!
This recipe is so satisfying and light. It hits all the important taste categories for me - sweet, sour, spicy, savory.
Incorporating veggies and fruits can be difficult so this recipe encompasses a ton of them in a quick, easy, and clean way.

1/2 cup Chopped Strawberries
1/2 cup chopped Red Onion
1/2 cup chopped Blueberries
1/2 cup chopped Cherry Tomatoes
1/2 cup chopped Bell Pepper (or jalapeno, or both!)
1/4 cup fresh mint or cilantro
1 small-medium lemon, juiced
1/4 cup extra virgin olive oil
1 tsp sea salt
1 tsp black pepper
1 tsp garlic powder or 1 clove chopped, Optional*
Finely chop all ingredients and mix together in a bowl.
Serve over chicken, fish, steak, salad, or eat with cucumber slices or veggie chips!
Store in refrigerator.
