Walnut- Mushroom Vegan Burgers

Using walnuts and mushrooms in place of beef lowers saturated fat but still has a hearty and filling texture.  Adding cabbages provides all the great prebiotics you need to fuel a healthy micro biome and gut!

Ingredients:

  • 1 cup walnuts (toast for additional flavor)
  • 1 cup pumpkin seeds, (raw)
  • 1 cup Portobello mushroom, quartered
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 2 tbsp paprika
  • ¼ tsp chipotle powder
  • 1/8 tsp rosemary
  • 1 ½ tsp rosemary
  • 1 ½ cups red cabbage, chopped
  • 1 pasture-raised egg
  • ½ cup extra-virgin olive oil

 

Directions:

  • Preheat oven to 350 degrees
  • Put walnuts and pumpking seeds in food processor and pulse until in a fine meal
  • Put the nut mixture into a large bowl.
  • Process the mushrooms, onions and garlic next and add the spices; pulse until fine and add to the bowl with the nut mixture
  • Next, add the chopped cabbage and pulse until finely chopped and add to the bowl
  • Beat the egg in a small bowl and mix in with the other ingredients
  • Wet your hands so the dough does not cling to your fingers and form the mixture into 12 patties
  • Now brush the patties with olive oil and bake on a greased cookie sheet for 10 minutes
  • Turn patter over and continue baking for another 10 minutes
  • Remove from the oven and serve with a nice mustard and wrap in collards
